Radiatori are small, squat pasta shapes that are said to resemble radiators. Although it is rumored that they were created in the 1960s by an industrial designer, their invention was actually between the First and Second World War.

Many believe the shape was based on the design of a radiator in a Buggati. Radiatori is considered to be a newer shape, as it was just created sometime between both world wars. Its unique shape works well in soups, salads and casseroles. The unique texture and design adds a fun aesthetic to any pasta dish.

Spicy Radiatori and Emmental Salad

360 gr pasta

radiatori shape

0.5 onion

2 garlic cloves

2 Tbsp tomato purée

1 shot vodka

250ml heavy cream

pinch chilli flakes

75g butter

cold from the fridge

80 gr parmigiano cheese grated

pinch salt

olive oil

How to prepare...

Step 1

In a pan, sizzle your chopped onion and garlic with some olive oil for a couple of mins until nice.

Step 2

Add your tomato purée, your vodka and let it evaporate for about 3/4 mins.

Step 3

Now add your heavy cream and season with salt and chilly flakes. Simmer for a couple of mins.

Step 4

In the meanwhile, boil your pasta in some salted water until al dente, drain it and add it to your sauce.

Step 5

Toss well over the heat to combine all the flavours together, adding a couple of spoons of pasta water to make it mamma mia!

Step 6

Turn heat off, add your cold butter and grated Parmigiano cheese and stir one last time. Add a few more drops of pasta water if necessary.
